Inspired by the Big Cheese and also tested with superb results by some chef friends of Who Cut The Cheese. Harvest Song Armenian preserved walnuts, beautifully preserved whole, in their shell and all! Simply slice walnuts horizontally to show the lovely walnut interior, drizzle the syrup over a partial wedge of English Stilton or Shropshire blue cheese and arrange the walnuts outside of the wedge. A charming presentation, quick and easy (prep time of 10 minutes tops)! The flavor profile of the preserved walnuts is similar to baklava filling. Yummilicious and a perfect holiday treat!

Holiday Nuts

Recipe by Vickie Gonzalez

SPICED NUTS
 
1  egg white
2 Tbsp  cold water
2/3 C  walnuts
2/3 C  pecans             
2/3 C  almonds
1/2 C  sugar
1-1/2 tsp  cinnamon
1/4 tsp  ginger
1/4 tsp  nutmeg
 
Beat egg white & water until frothy. 
Stir nuts with beaten egg whites to coat them,
drain in a colander. 
Mix sugar & spices in a ziplock-type bag.  Add nuts to ziplock, shake to coat.  Spread on a plate and microwave for 1-1/2 minutes.  Stir then microwave again for 1-1/2 minutes.
 
CANDIED NUTS
 
Non-stick vegetable spray
1 C  walnuts and/or pecans
2 Tbsp  corn syrup
1 Tbsp  sugar
1/4 tsp  salt
1/8 tsp  black pepper

Bake on a cookie sheet for 15 minutes at 325 degrees.

Things to Know When Buying a Sparkling Wine

The sweetness of a sparkling wine or Champagne ranges from:

  • Extra Brut (Brut Sauvage) - Totally dry
  • Brut - Dry
  • Extra Dry - Medium dry
  • Sec - Slightly sweet
  • Demi - Sec: Fairly sweet
  • Doux - Sweet

A Champagne Story

Around 1700, sparkling Champagne, as we know it today, was born in France. However, the English scientist and physician Christopher Merret documented the addition of sugar to a finished wine to create a second fermentation six years before Dom Perignon set foot in the Abbey of Hautvillers and almost 40 years before it was claimed that the famed Benedictine monk invented Champagne. Contrary to legend and popular belief, Dom Perignon did not invent sparkling wine. Merrett presented the Royal Society with a paper in which he detailed what is now called method champenoise in 1662.

Champagne is a type of Sparkling Wine, but...

The type of sparkling wine that can be truly called Champagne is made only from grapes of the Champagne region of France. French law dictates that all sparkling wines made in the region must be made by a special process called the traditional or champagne method. The French term is méthod champenoise. Only then, should it be called Champagne.

Bubbles produced in other parts of the world, even if they are created by the traditional method, should be referred to as sparkling wines. The name of sparkling wine doesn't mean it is of lesser quality automatically, it only means that it doesn't meet the qualifications to be called Champagne.
