Montgomery Cheddar is BACK!!!

Thanks to the Big Cheese for this special recipe which has been tried, tasted, tested, and tasted again & again by Team Cheese! Get your Stuey aprons ready!!

 MACARONI &  MONTGOMERY CHEDDAR CHEESE

YIELDS 6-8 SERVINGS

4 TBSP                      Butter

3 TBSP                      Flour

1/4 tsp                      Cayenne

1/4 tsp                      White Pepper

1 & 1/2 C                   Hot Milk

2 C                             Grated Montgomery Cheddar Cheese

2 LB                           Cooked Macaroni

1/2 C                          Heavy Cream

1/4 C                          Bread Crumbs

Pre-heat oven 350.

Boil macaroni.

Make a roux with 3 TBSP butter & 3 TbSP flour cook for a bit to take away raw flour flavor, add a bit of hot milk at a time. Stir or whisk constantly until a nice thick consistency. Season with spices. Stir in half the cheese. Fold into warm mac noodles.

Melt remaining butter and coat the bread crumbs.

Butter and dry crumb a half size hotel pan (10X12).

Put 1/3 cheese on the bottom of pan, alternate with cheese/sauce/noodle mixture. Top with last of cheese, pour in heavy cream and top with buttered bread crumbs.

Bake for 30 minutes or until bubbling and golden brown.

Londer Vineyard Gewurztraminer from Anderson Valley, CA

This wine is a new addition to the shop and The Big Cheese's latest favorite, who says “it is off the charts fantastic! Loaded with lychee, minerality, and a touch of petro on the nose.”

On the southern boundary of the Navarro River in southwestern Mendocino County, Londer Vineyard's grapes flourish beneath the fog. This beautiful, dry Gewürztraminer's perfume is redolent of fresh cut flowers, particularly rose petal, and citrus. These aromas carry through onto the plush mid-palate with flavors of stone fruits and white pepper.

Regarding Londer’s specific appellation, it is cooled by the ocean nearby and the seemingly ever present oceanic fog. This picturesque wine region is rife with cool-climate grapes like Riesling and Gewürztraminer plus Chardonnay and Pinot Noir, which are responsible for impressive sparkling wines.

Who Cut The Cheese acquires cheeses from many different places around the world. Of those, there is only one place where my family gets our delicious Montgomery Cheddar: Neal's Yard Dairy!...Which can only be found at WCTC in Hawaii

 Hidden between the winding streets and alleyways of London's Covent Garden district, Neal's is what you would expect of a fine cheese shop and more. While it took me and my directionally disorganized family a while to find this cheesy haven, it was worth the harrowing journey. The first thing you notice when you step inside is the huge selection of cheeses, still packed and bursting with flavor. Being the hopeless cheese monger that I am, I had to try some fresh Montgomery Cheddar. It was the freshest, most flavorful cheddar I've ever had (and that's saying a lot!).

 Neal's Yard was founded in 1978 and has been an outlet for many other cheese stores since. Neal's is so successful they have made their very own cheese: Stichelton. Stichelton is a non-pasteurized blue that is made with its own recipe (unfortunately no amount of bribery could persuade the store mangers to give up the secret to me). With its huge selection, charming staff, and excellent Montgomery Cheddar, Neal's Yard is a must see for any cheese monger!
