Finalmente Esta Aqui... Jamon Iberico!

It's here, delicious Jamon Iberico. This ambassador of Spain has reached us all the way out in the Pacific!

Jamon Iberico or Pata Negra (black hoof) is a cherished Spanish ham and a decendent of wild pigs who roamed the Iberian Penninsula. Their lineage dates back hundreds of years; Christopher Columbus is rumored to have brought some of these wild pigs onto the Santa Maria on his voyage to the New World.

These pigs live a priveledged life from the moment of their birth until the 'sacrifice' (as the Spaniards say). They have a much longer life span than a normal pig, around 2 years, and are given plenty of land to roam. This excersise creates beautiful, and delicious, fat marbling in the muscles. They feed on grass, grains and acorns from the fields.

Jamon Iberico is a delicious cured ham with a silky smooth texture and a rich savory palate. Perfect accompanying a cheese plate, wrapped around melon fruit, or just on it's own! Muy Delicioso!


Tasting Highlights

In January we held our Best of the Pacific Northwest Tasting and had a remarkable turnout of 60 people! We were thrilled with the pairings and some new wines & cheeses have made a home at the shop. We think these were the most popular selections from the tasting.

Argyle Brut: This sparkling wine is produced in Dundee, Oregon from 58% Chardonnay and 42% Pinot Noir. It is pale yellow in color with delicate aromas of crisp apple, melon and honeysuckle with hints of vanilla and spice. One sip brings a classic stoney minerality to your palate with notes of bright lemon zest and a long palate coating finish of yeast. It is fresh and crisp, and quite enjoyable! $25.99

Seastack: Produced by Mt. Townsend Creamery in Port Townsend, Washington. This soft-ripened cheese has a faint layer of ash under it's beautiful bloomy rind which enhances the earthy flavors of the cheese. It is named for the rock formations that adorn Washington's coastline. $19.99/unit 

Velvet Devil: This Charles Smith wine uses grapes sourced from the Columbia River Valley in Washington. It definitely lives up to its name, it's smooth as velvet. Thre are nice hints of blackberry, spice and milk chocolate adding to the richness of this wine. It is a very enjoyable wine with soft lingering tannins on the finish. $21.99 

Beecher's Flaship Reserve: This cow's milk cheese is produced in the heart of Seattle at Pike Place Market. The flagship reserve is a clothbound cheddar with robust and nutty notes of caramel, fresh fruit and butter. It is turned and rubbed with butter daily for the first two months of aging, then three times a week for another two months, and finally once a week for the remainder of the aging process. To say the least, it may not fit into everyone's new year's resolution but it's become a quick house favorite! $34.99/lb
