  ~Cheese Crisps for Salads~

In Italy, the practice of grilling greens is common.  I love the smoky taste grilling imparts to whole sliced heads of romaine and radicchio finished with Caesar dressing.  The presentation is gorgeous, too.

The perfect accompaniments to these summer salads are delicious toasty cheese wheels.  They are an interesting alternative to bread or croutons.

Grilled Halloumi Cheese

1 (8.5 oz.) package of Halloumi per 2 guests, cut lengthwise in to 6 slices, patted dry.

Halloumi, a firm mild Cypriot cheese popular in Greece, can be placed directly into a dry nonstick skillet (I like to use my grill pan) or cooked on a grill.  The outside will turn brown and crisp leaving the inside soft and melted.  Serve along side salads or alone as an appetizer with mustard.

Frico/Parmesan Crisps

5 cups Gran Padana cheese, finely grated*

Heat a non-sticks skillet over medium heat.   Sprinkle about ¼ cup cheese in to center of pan and spread into a 3-4” round.  Cook until completely melted, bubbling all over, and browning at the edges, about 1-½ minutes.  Remove pan from heat; let stand until bubbling subsides.  Loosen edges and turn frico over.  Return to pan and cook until golden brown on bottom, about a minute.  Transfer to parchment paper lined sheet pan to cool.  Repeat with remaining cheese.

*The addition of spices to cheese mixture works well, too.  I like ground cumin or smoked paprika.

Wine & Cheese of the Month

 

Domaine de Fontsainte Gris de Gris, Rose, AOC Corbières

Langeduoc, France

This wine has a lovely salmon color with amethyst tints. Fine separate legs run slowly down the glass. The expressive wine has a nose of raspberry, cherry and freshly picked strawberries - followed by tropical aromas such as pineapple and mango.  

With considerable freshness - the density and richness of the fruit tango with the acidic vitality. Superbly balanced, this is an extremely cravable wine! Ideal as an aperitif with toast, cheese, and crushed olives, or with wok-fried vegetables and garlic mayonnaise, grilled fish, lamb with rosemary... and more!

Grana Padano, Cow’s milk, Italy

Grana Padano is one of the most popular DOC cheeses of Italy. The cheese with a distinctively grainy texture (grana means “grain”) was created by monks and has been produced since the 12th Century. Like Parmigiano Reggiano, Grana Padano is a semi-fat hard cheese which is cooked and ripened slowly (for up to 18 months). It is produced by curdling the milk of grass-fed cows. The cows are milked twice a day, the milk is left to stand, and then partially creamed. It is produced all year round and the quality can vary seasonally as well as by year.
