The Big Cheese, Ann Tuomela, is back from her travels and has stories to share. First stop for this issue, is her whirlwind tour of the Windy City. Chicago is an awesome town with fantastic food! Here are a few of her favorite restaurant stops to highlight:

Avec is absolutely a must visit! They are so busy that they don't even have or need a sign and the entrance is almost a secret. Once in though, the fabulous & fun atmosphere and clean architecture unfolds with an eclectic menu and extensive wine list. Not to be overlooked are sixteen cheeses to choose from to design your own cheese course. We dined on a new Italian, Tomini, a soft cow's milk cheese with herbs, Persille du Beaujolais, a raw cow's milk from France, and Amanteigado, a raw ewe's milk from Portugal... all were completely mouthwatering and delicious. Bin 36is the major wine and cheese restaurant in "Chi-town". They offer flights* of cheese and wine to make any kasephile or wine aficionado flip! *What is a cheese flight or a wine flight some might ask (as some of us here asked the Big Cheese)?

A "Flight" is a taste of several wines that are related to one another by grape varietal, geographic region, or style. The wines are poured into 2 or 3 oz quantities. The experience allows a progression or comparison, for example, from lighter to fuller in weight or wines of the same varietal but from different regions of the world. We salute the idea of wine flights with cheese flights, which as you may have guessed, is a group of several cheeses from the same, a contrasting, or a complimentary category, served together, so the nuances and flavor differences can be appreciated.

The idea of such "flights" is what we do during our monthly wine & cheese tastings, so if you haven't experienced it, you must come try and join in the fun!


Cheese and Wine of the Month

St. Maure (1/4 lb for $8), is a classic Loire Valley chevre in the shape of a small log with a stick of straw running through its middle. This cheese comes from the center of France in the goat fields around the Loire river. This small log enters a cave young, fresh, and wet, yet emerges drier, denser, while remaining yound and acidic, but also buttery and smooth.

Ménage à Trois Rosé ($12.99), California Rose Wine, a madcap blend of Merlot, Syrah, and Gewurztraminer. The winemakers at Folie a Deux who make this Rosé feel that three varietals is better than one or two in your blend. The two red grapes received a 24-hour cold soak on the skins to give the wine its suggestive pinkness and luscious body. The Gewurztraminer was cold fermented to preserve the exotic spice and naked fruit. Just a fruit-laden roller coaster ride of raspberries, strawberries, lychee nuts, and flowers with a silk smooth sweet finish. Ménage à Trois examines what happens when you put three attractive, single, young grapes in one exquisite bottle. It's fun; it's exciting; it's legal in most states.
