Preparation & Assembly Preheat oven to 400 degrees. Cut raisin bread into bite size squares. Season raisin bread with butter, olive oil, salt, and pepper. Cook on a sheet in the oven pan until golden brown (crunchy). Pull from oven and let cool. Cut open avocado and season with lime, salt, and pepper to taste. With fork make guacamole like consistency with avocado. Cut Leyden cheese to raisin bread size. Chop up chive. With a butter knife, put the avocado onto the raisin toast. Sprinkle chives onto avocado (so it sticks). Put Leyden Gouda on top of avocado. Pop it into your mouth and enjoy… Mmmmmmmm Ph. 808.874.3930

Innocent Bystander Pinot Gris Central Victoria, Australia The concept behind the wines of Innocent Bystander Winery is to produce food friendly, great value wines, that are not your ordinary varietals. The grapes for the Pinot Gris, from the Yarra Valley region, were hand picked at flavor ripe perfection, chilled and then whole bunch pressed. The up-front fruit on the palette shows pear, apple and lemon zest with honeysuckle, followed by cashew notes, and light oak, on a bone dry finish. $25.99 5 Spoke Creamery “Tumbleweed” Cheese Westchester, NY A new artisinal cheesemaker, 5 Spoke Creamery, has ventured where few cheesemakers in the United States have, into the realm of raw milk cheeses. To set any concerns, the 5 Spoke Creamery cheeses are safe and have all been aged a minimum of 60 days, which kills any harmful bacteria in the raw milk. “I can reassure you these cheeses are healthy,” said Alan Glustoff, 5 Spoke’s owner and the cheese producer. “There are many studies showing that raw-milk cheeses aid in the absorption of calcium and boost the immune system, among other health benefits.” Aside from the health benefits of raw milk cheeses, which are commonly produced in Europe, the flavor is of utmost importance to us. There’s no doubt Tumbleweed is cheddar-y, but more crumbly and creamy with a subtle fruit flavor than traditional cheddars. Certified kosher, and made by an Amish cheesemaker, Tumbleweed is made like cheddar yet with the thin bloomy rind of Cantal. It is aged for 8-9 months. Pairs nicely with dijon mustard and would hold up well to Sangiovese, Cabernet Sauvignon, English Brown Ale, IPA, or Pale Ale. We also found it quite enjoyable with the white pairing of Innocent Bystander Pinot Gris. Enjoy! $27/lb

cheesetoid by Gordie In honor of Father's Day I chose to tell you about Blue Cashel, which I think is a very manly cheese and one that my father and I are particularly fond of. It is produced by the Grubb family in Ireland and is the only raw cow's milk blue cheese from Ireland. It has a creamy texture with a mild blue cheese flavor and a touch of sweetness. My father and I love to supplement our juicy steaks by melting Cashel on top. Happy Father's Day!
