Cheezy Happenings February 2006

 

 

 

     Yes, it’s time for yet another vivacious cheese journey.  This month, we’ll be featuring goat cheese at Judy and Mark Ellmans Mala Ocean Tavern.  The time will be 2pm and we are excited to share five pairings of cheese and wine.  Mala will be featuring one of its own menu items, Beet salad with Kula goat cheese paired with a friendly Sicilian Rose. The Big Cheese and the cheese staff will be presenting four additional pairings including some world-renowned classics like St. Maure de Touraine and Con Pujol from Spain.  Seating is limited, so call ahead for a reservation.  There is still space!

·         Eating & Living Well on Maui!  Who Cut the Cheese & Kihei Café Host a new Radio show on KAOI 1110 AM Radio.  12-1pm Mondays!  The shows are broadcast live at who cut the Cheese on 3/6 & 3/20.  Tune in or drop by!

·         Friday, March 31st.  Sultry Sangiovese.  Featured on the lanai of our friendly neighbors at Bocolino’s.  5-6pm  $15  Five wines with 5 cheeses.  Informal taste around, reserve by calling ahead  874-3930 or just stop by.

·         Panini back in the shop by popular local demand.  11am2pm daily.  Call ahead for a quick pick up.  Three flavors to choose from:

1)       Saint – Maure de Touraine with Vouvray, 100% Chennin Blanc for white lovers or Chinon 100% Cabernet Franc for our red lovers.  The cheese is rich with history as it is with creamy goat flavor with a citrus essence and nutty aroma & flavor.

2)       Chaurce with your favorite classic bubbly.  A bottle of Leatitia Brut Rose and a wheel of Chaurce makes for a gorgeous dessert, or dinner for two at sunset.  Plan ahead and have a big salad for lunch before ingesting this memorable pairing.

 

     Leave it to the French to come up with regulation of cheese making ~ Appellation d’Origine Controlle.  The number of name controlled cheeses in France was recently at 32 and climbing.  Similar to the AOC for wine production in France, formal appellation designation has strict compliance required in order to be granted formal name status.  Such specifications as breed of animal, area where the animal comes from, where the cheese is made, the cheese making process, fat content, type of rind, as well as physical characteristics like size, shape and weight.  Currently we have a count on the number of AOC cheeses we have in the shop at any given time.  The number is 10!  Two of our favorites along with wine pairing from the same regions include :
