A New Face in the Cheese Case

You "Tel-e-me" and now we tella You!

Teleme is a cow's milk cheese... our interpretation of a domestic Taleggio with tang rather than beefiness. This cheese has been made for the past 138 years and is of Greek origin. Traditionally it was made from goat and sheep's milk. It is now produced in Los Banos, California, and is made with cow's milk. Try it in your favorite risotto recipe topped with a tad of freshly grated truffle pecorino cheese... WOW!

This cheese is our new favorite for our grilled panini sandwiches. Can you say "to die for" !?! Paninis are served at Who Cut The Cheese until 5pm most days and are only $10.99 (including a bottled water and Greek mixed olives). Call ahead for quick pick-up, 874-3930.

Castillo de Monjadrin Chardonnay, Navarra, Spain

A new wine on the floor, or rather a re-invite! Some wines come and go, and then some are re-invited to the shop after revisiting. After attending a wine tasting hosted by Chamber & Chambers and Winebow Brands Internatinal, at Mala in Lahaina, we are re-inviting lots of good diddies!

Knowing the space constraints of the shop, we can't possibly represent ALL of the wonderful wines that we want. We organize by country, weight, and body of the wines rather than strictly by varietal. Whites increase for spring and summer, Roses are always in! Reds more for fall and winter. We follow these trends based on menus and weather conditions.

With all that said, Castillo de Monjardin Chardonnay is back as some others from this great portfolio will be re-appearing! We don't carry many chardonnays, but this one fits a great cheese pairing profile. The wine is from Navarra, Spain and it is a great value. It comes from a single vineyard of chardonnay with a very low yield of 2 tons per acre. It sees NO oak and is steel fermented, so it lends to all the lovely minerality of the tierra (Spanish for "land"). It's medium-bodied with the crispness and beautiful concentration of apple and pear fruit. A steal of a deal at $17.99! Try it with the Tronchon, a cute 3 animal - cow/sheep/goat - cheese from the same region. It's a white cheese starting out mild then kicks in on the finish with a zesty tang. Salute!

Another stop on my travels in England, a country renowned for its culture, history, unbelievable cheese and literature, was Fortnum and Mason in London.  Fortnum and Mason is the quintessential English shop. It is also known for another, slightly less well known to us here in the US dish, called Welsh Rarebit. 

Welsh Rarebit IS the best grilled cheese sandwich ever to be conceived by man. It is the ultimate in inside-out grilled cheese with layer upon layers of quality cheddar on the outside of the plump and savory sourdough bread. While definitely not finger food, Welsh Rarebit is by far one of the best lunch entrées any sane cheese monger could hope for. The cheese on the sandwich I had was a traditional English cheddar that has been made the same way in Southern England since 1835.  So if you catch yourself in England and you're low on fuel after touring the sights, grab a seat at a café, order a Welsh, and your stomach (and taste buds) will know delight.
