Big Ham & Big cheese show support for HCI Hawaii Canines for Independence!

A lovely soiree was hosted at a private home at Keawekapu Beach on Valentines Day. Sunset, cocktails, silent auction, live auction, dinner, changing of guards for Tucker, lots of laughs and tears of joy. Wow, what an evening!

Thank you Mo, your fabulous team, and your wonderful four legged fuzzy friends who work so hard to make people's lives so much more. Tucker, who visits people daily at the Women's and Children's Kapiolani Hospital, is a true inspiration for bringing smiles and happiness to those who have severe illnesses. Way to go you guys!

New recruits are Harley and Hunter...cute, fuzzy, and darn smart! They will change people's lives when they are in full service and even before!  Mahalo to the community that supports this wonderful organization!

Stuffed Mushrooms

These mushrooms stole the show at the Wonders from Down Under tasting! Mahalo to Jana McMahon for a stunning performance of culinary expertise! We gave her a cheese that we love...Urgelia, a nutty little cow's milk cheese from Catalonia (a little stinker!), and Jana did her magic!

  • 25 cremini mushrooms, cleaned and stemmed
  • 8 oz. Big Island Goat cheese
  • 8 oz. Urgelia cheese
  • 8 oz. Cooked chestnuts
  • 8 oz. Almonds, toasted
  • 1 tsp. Dried marjoram
  • Garlic chives, finely chopped
  • Panko

Grind almonds until finely ground.  Be careful not to overprocess into almond butter.

Place goat cheese, chestnuts, marjoram and garlic chives in food processor and process until smooth. Add almonds. Fill mushroom caps with cheese mixture. Dip caps in panko. Top with small slice of  Urgelia. Bake at 375F for 30 minutes.
