La Saba by Leonard!

Saba has been enjoyed since 3000 B.C. in ancient Greece and the Middle East. It is made of grape must. Must is the juice of freshly pressed grapes, prior to fermentation into wine. Must contains various quantities of pulp, skins, stems, and seeds, called pomace or grape solids, which typically comprise between 7-23 percent of the total weight of the must. The two primary grapes used are Trebbiano, a sweet white Italian varietal and Lambrusco, also a sweet Italian, red varietal. This sumptuous product loves cooked and fresh fruits, like pears, peaches, apricots, and apples. Baked chestnuts love to be paired with this product. Saba also works as a great marinade for lamb or venison.
