Dolce Gorgonzola Tenderloin

What you'll need

Dolce Gorgonzola Topping

  • Dolce gorgonzola cheese
  • Sour cream
  • Garlic cloves

Tenderloin Medallions

  • Tenderloin tip
  • Smoked bacon

Garnishes and plating

  • Bread, crackers, or broken pieces of lavosh
  • Herb leaf options: Parsley, Thai Basil, or tender Sage
  • Garnish options: Either well-drained slices of peppadews, cornichons, brine-cured olives, or for a super-treat try the French Fig Preserve with Bay Leaves (all garnish options available at Who Cut The Cheese)

Instructions

Make and plate this recipe as an appetizer course: You can use real filet mignons (cut into pieces and squeezed into shape), or make this with tenderloin tip, the tail of the tenderloin the filets have already been cut from. Slice the tip into sections about tall enough to accommodate a wrap of bacon, then wrap with your favorite bacon. Fry the meat in a high-heat skillet, rolling the pieces on their bacon edges. Then, for less than a minute per side, brown the beef. Let the meat rest while you mix the topping.

To each three ounces of Dolce Gorgonzola, add one large minced clove of garlic; enough sour cream to make a lumpy, but creamy glop, and less salt and white pepper than you think you need. Slice the wrapped beef, put each slice on a round of baguette, a nice cracker or a broken piece of lavosh. Top with dolce gorgonzola mix and garnish each appetizer with an herb leaf (parsley, Thai basil and tender sage are good) or well drained slices of peppadew, cornichon, brine-cured olive or, for a super treat, garnish with French Fig Preserve with Bay Leaves.
