All of us here at cheese headquarters hope your holidays are in a
good full swing--got that turkey under your belt (oooh, no pun intended!), but there’s
always room for cheese!
First, I want to extend a special mahalo to my sister, Vickie
Gonzalez, the "Eastern Division", in Loveland, Ohio. She is the one
responsible for getting these newsletters out bi-monthly. Please note that

Urgelia from Spain--a
customer request from Vince, a new attendee at our last cheese and wine tasting.
This cheese reminds me of a Port Salut from France. It has a semi-soft, creamy
texture and color, mild flavor from cows' milk. "Creamily" delicious.
A nice pairing is Clos La Chance Syrah from Paso Robles, $24.00.

Sanni, a suggestion from our "girl Friday". This one was a toughy to
track down! It literally took months to locate this herby and savory delight.
It's made from sheep’s milk from Corsica. It's about 3 months old with a very
soft white paste that is totally encrusted in rosemary, peppercorns, thyme and
other herbs. A must check out for fun holiday cheese! A delightful wine pairing
is a new white wine from Spain--Can Feixes, Very crisp and lively, perfect with
all the herbaceousness going on in the cheese. The wine is also, a steal of a
deal at $10.00.
The Georges Duboeuf Beaujolais Nouveau this year is yummy.
Perfect picnic and celebration wine! We found a fun combo with the Sottocenere
Truffle cheese from Italy. Screams holiday fun!

is all about Spanish Cheese and Wine. We’ll be tasting Garrotxa with Can Feixes
Blanc Seleccio; Mahon with Carchelo Syrah; Zamarano with Artadi from Rioja;
Torta del Casar with Palacios Remondo Placet from Rioja; AND Cabrales Souffle
with Toro PX Sherry 1972.
